Immerse yourself in the flavours of the evening, starting with a delicate Canevel Prosecco Extra dry DOC, perfectly complementing the richness of our brioche topped with Foie Gras, Kaluga Caviar, and Tallow Mayo. As the evening unfolds, savour the crisp Moxxe Pinot Grigio 2018 alongside our signature Sourdough bread, paired with Sardine, Golden raisins, Gorgonzola Mascarpone mousse, Pine nuts, and Caramelised onions—a symphony of textures and tastes. The wine pairing journey continues with the robust Campofiorin 2020, enhancing the flavours of our Bauletti Stracotto di Amarone served with soffritto, Aged parmeggiano, and Lardo di colonnata crisp—a true celebration of Italian cuisine. Prepare your palate for the pièce de résistance: the Costasera Amarone Classico 2018, perfectly paired with our 30-day Aged Australian Wagyu Chuck eye, Pomme Pavé, and Gremolata—a culinary masterpiece crafted to perfection. Savour the complexity of the Costasera Amarone Reserva 2017 alongside the Asinello Tenderloin, Polenta crisp, Asparagus emulsion, coffee-infused jus, and smashed hazelnuts—a harmony of flavours that will leave you wanting more. To conclude this unforgettable evening, down a glass of Grappa Elisir Allo Zenzero and indulge in a decadent dessert featuring a Bambinella (Poached Maltese June pear) in Recioto della Valpolicella.
