Now that Christmas is over, you’re left with a fridge full of leftovers. If you find that you’ve cooked enough food to feed an entire army and have loads of leftovers, don’t throw them away! If after giving some leftover Christmas goodness you still have more food, don’t waste it! Instead, try some of these Christmas leftover recipes.

1. Toasties

This is the classic, leftover comfort meal. If you have leftover ham or turkey, simply put a couple of slices between some bread, add tomato and cheese, and toast it. And voilà – You have some seriously crunchy deliciousness!

2. Carbonara

Chop up any leftover ham, fry it until it’s crispy and add it to make a wholesome, creamy carbonara that’ll satisfy your taste buds.

3. Stir-fry

Stir-fry is the perfect choice if you’re after a lighter meal after Christmas, due to its abundant vegetable content. Fry up your leftover meat and veggies, along with herbs and a simple soy-sauce-based dressing. Serve with a light, low-carb option-such as rice. Better yet, why not spiral some zucchini spaghetti to make it extra veggie-licious!

4. Veggie Pizza

Slice up your leftover roasted (or raw) veggies and toss them onto a ready-made pizza base along with any other toppings of your choice and pop it in the oven. It’s as easy as that!

5. Lasagna

Lasagna is the ultimate comfort food and you can easily transform your leftover veggies into lasagna. You can add anything your heart desires, from spinach or kale to eggplant or capsicum.

6. Chilli & Seafood Spaghetti

If you find yourself with a huge bowl of prawns and muscles in the fridge, throw them together to make a chilli seafood pasta. All you’d need to add is fresh tomato, garlic and parsley. Don’t forget to add some of the many kinds of cheeses that you’ve got leftover!

7. Smoothies and Smoothie Bowls

If you’ve got leftover fruits, you can make a large variety of delicious smoothies and smoothie bowl combinations. Simply blend up your fruits with some water or your choice of milk and top your smoothie bowls with more fruits or nuts and seeds.

8. Sorbet

If you’re sick of fruit salad, whip up an easy sorbet. All you need to do is cut and freeze all your leftover fruit and blend them together with a touch of coconut water. Serve together with crushed leftover nuts and wafers.
