For the Love of Wines

At Sciacca, if there is one thing we are as passionate about as good food, it’s wine. Creating the perfect taste for our guests often starts with the wine list; a well-chosen wine will enhance the guest experience of the food, and likewise, great dishes will compliment the best of wines if chosen wisely.

Spoiler alert. Our new wine list is currently under construction, and we just wanted to share our approach to building a great wine list.

At Sciacca, if there is one thing we are as passionate about as good food, it’s wine. Creating the perfect taste for our guests often starts with the wine list; a well-chosen wine will enhance the guest experience of the food, and likewise, great dishes will compliment the best of wines if chosen wisely.

So, what defines a great wine list?

Running a restaurant(s) is a dynamic process, and the active work environment is a highly volatile business like no other. It takes lots of passion, dedication, focus and patience to create the perfect balance that is first and foremost in keeping with the venue’s philosophy. But, back to the wine list, creating an ideal wine list is teamwork. The chef and sommelier need to work together as a team to exchange information about the food menu, taste the different wines and match them to the dishes with utmost care about availability, price and feasibility.

Ideally, we would love to always have all the wines available in our cellar, but that is only a dream. In reality, we look to have the best balance of wines, including excellent local wines and some famous foreign wines. Still, we primarily include wines we have tested and tried with our dishes, knowing they will be a perfect match.

Even though it is hard, we try to keep different world regions included, and it’s important not to be biased by the location. As a next step, we will try to make our wines available for different clients, hence having similar varieties at different price levels.

Word of wise is buying from established wine producers, so the availability of specific quantities will not be an issue. Still, we think creatively and look for up-and-coming regions and wine producers to build new relationships. It’s essential to keep up to date with what is happening in the wine world. We explore different regions, grapes, and styles with a good balance of old and new world wines.

Usually, we like to visit the wine producers and suppliers, establish relationships, and purchase exclusive wines or import ourselves to ensure that most of the wines you see on our wine list you won’t find elsewhere. We aim to offer a good range of wines with several options in each category – some light wines, a few in-betweeners, and a good selection of reds, rose and sparkling varieties at various price points.

Attention to detail

Our new wine list will empower our guests by giving them all the info, including grape, style, and wine region. Of course, we also make decision-making easy by providing suggested pairing recommendations and advice from our knowledgeable team on the floor.

We also believe that our wines deserve to be served in style. Riedel finely tuned crystal stemware are specially made and shaped to complement different wines. They are our glasses of choice at Sciacca, designed to best deliver the ‘message’ of the wine to your senses and add to your overall drinking enjoyment. Let us not forget that we use decanters whenever needed to improve the aeration process in young wines by introducing oxygen, “open” them up, softening flavors and aromas, and separating sediment build-up in the older wines.

From the initial presentation of our new wine list to the very last sip, we aim to provide a pleasurable and memorable experience for our guests that will keep them coming back for more.
